Do the water test. Drop threads in warm water. Real saffron releases color slowly over 10-15 minutes and stays red. Fake saffron colors water instantly and often turns pale or breaks apart.
Start with 5-8 threads for tea or milk. Use 10-15 threads for biryani or pulao. A 1-gram jar contains about 450 threads β enough for 30-50 uses.
Keep it in the original airtight jar. Store in a cool, dark place away from sunlight and moisture. Properly stored saffron stays fresh for 2-3 years.
Each flower produces only 3 stigmas (threads). It takes 150,000 flowers to make 1 kg of saffron. Everything is handpicked at dawn during a 2-week harvest window. This makes it the most labor-intensive spice on earth.
